Bacon Avocado Salmon Sliders

These were unbelievably tasty. I am a hugee salmon fan, and when you pair it with bacon and avocado, what could be better? The sliders were light but filling, and very flavorful! I would definitely make these again.

 

Slightly adapted from How Sweet It Is:

Salmon Sliders with Bacon, Avocado, and Sriracha Mayo

makes about 6-8 sliders

1 pound raw skinless salmon

1 teaspoon salt

1 teaspoon pepper

3 slices thick-cut bacon, cut into thirds

2 tomatoes, sliced

1 avocado, sliced

1/4 cup mayonaisse

1/2 teaspoon Sriracha

6 slider buns or dinner rolls, toasted (gluten-free if desired)

Cook bacon in a saucepan over medium-high heat until crispy, let dry on a paper towel.

Preheat the broiler in your oven and place the top oven rack as close as it can go to the broiler. Cut the salmon into square pieces and season with salt and pepper. Place on a pan with foil with a little olive oil, and broil for 5 minutes. Gently flip and broil for about 5 minutes more (depending on size of salmon). 

In a small bowl, mix mayo with Sriracha. Spread some on each bun, top with a square of salmon, a slice of bacon, and a sliver of avocado.
